Tuna Melt

This is an amazing Tuna Melt recipe!

INGREDIENTS:

4 slices whole wheat bread

2 (6 ounce) cans solid white tuna, packed in water, drained

3 green onions, white and tender green parts, chopped

1 medium ripe tomato, chopped

2 tablespoons reduced-fat mayonnaise

1 tablespoon lemon juice

1/8 teaspoon kosher salt

1/8 teaspoon freshly ground pepper

4 dashes hot sauce

½ cup shredded sharp Cheddar cheese

DIRECTIONS:

  1. Preheat the broiler. Toast the bread in the toaster.
  2. Combine the tuna, green onion, tomato, mayo, lemon juice, salt, pepper and hot sauce in a medium bowl. Spread ¼ cup of the tuna mixture onto each slice of toast. Sprinkle each with 2 tablespoons of cheese.
  3. Place sandwiches on a baking sheet and broil until cheese is bubbling and slightly browned, 3 to 5 minutes.

Tuna Salad Sandwich

This is a simple Tuna Salad Sandwich recipe on whole wheat bread. It’s yummy!

TIME: 50 minutes

SERVES: makes 6 sandwiches

INGREDIENTS:

1/3 cup reduced-fat mayonnaise

2 tablespoons Dijon mustard

1 tablespoons whole grain mustard

1 garlic clove, minced

1 tablespoon fresh lime juice

6 tablespoons sweet relish

2 (6 ounce) cans solid albacore tuna packed in water, drained

1/2 cup chopped celery

1/2 cup chopped red onion

1/2 cup chopped fresh cilantro

12 slices whole grain bread, toasted

2 medium tomatoes, sliced

Arugula leaves or spring mix

DIRECTIONS:

  1. In a large bowl mix together the mayonnaise, mustards, garlic, lime juice and sweet relish until well blended. Stir in tuna, celery, red onion, and cilantro. Cover and refrigerate for at least 30 minutes.
  2. Spoon 1/2 cup of tuna on a piece of toasted bread. Top with tomato, arugula and a toasted bread slice. Cut sandwich in half
